Ingredients
- 1/2 lb boneless skinless chicken breasts
- 2 tsp vegetable oil
- 1 cup chopped green bell peppers
- 3/4 cup fresh chopped green onion
- 16 oz canned unsalted diced tomatoes
- 1/2 tsp salt
- 1/2 tsp Garlic Powder
- 1/2 tsp Chili Powder
- 1/4 tsp hot red pepper flakes
- 1 1/2 lb raw medium shrimp
Instructions
- Cut chicken into 1/2-inch cubes.
- In large skillet, heat oil over medium. Add chicken. Cook 5 minutes, turning occasionally.
- Add green pepper and onion. Cook 2 minutes.
- Stir in tomatoes, salt, garlic powder, chili powder, and red pepper flakes.
- Bring to boil, reduce heat to medium-low, and simmer 20-30 minutes, uncovered, until mixture thickens.
- Add shrimp and return to boil.
- Reduce heat. Cook for an additional 3-4 minutes, until the shrimp turns opaque and pink. Serve.
