Ingredients
  • 1 14.5-oz can low sodium chicken broth
  • 1cup water
  • 1lb bonelessskinless chicken breasts
  • 2 diced medium avocados
  • 1 finely diced small onion
  • 2 diced small tomatoes
  • 2tbsp chopped fresh cilantro
  • 2tbsp Sour Cream
  • 1tsp salt
  • 1/2tsp ground black pepper
  • 1tsp Fresh Lemon Juice
Instructions
  1. In a medium saucepan, bring chicken broth and water to a boil. Add chicken breasts, and simmer over low heat for about 20 minutes.
  2. Remove chicken and chop into small chunks. Cool in a medium bowl for 10 minutes.
  3. Add remaining ingredients and mix well
