Ingredients
- 1 14.5- oz can low sodium chicken broth
- 1 cup water
- 1 lb boneless skinless chicken breasts
- 2 diced medium avocados
- 1 finely diced small onion
- 2 diced small tomatoes
- 2 tbsp chopped fresh cilantro
- 2 tbsp Sour Cream
- 1 tsp salt
- 1/2 tsp ground black pepper
- 1 tsp Fresh Lemon Juice
Instructions
- In a medium saucepan, bring chicken broth and water to a boil. Add chicken breasts, and simmer over low heat for about 20 minutes.
- Remove chicken and chop into small chunks. Cool in a medium bowl for 10 minutes.
- Add remaining ingredients and mix well
