Basic homemade chicken stock for all your cooking needs

Ingredients
- 1 whole raw chicken
- 4 Medium Garlic Cloves
- 2 medium onions
- 2 medium celery stalks
- 1 medium carrot
- 1 cup fresh sliced parsnip
- 6 parsley sprigs
- 1 Bay Leaves
- 1/4 tsp black peppercorns
- 8 cups cold water
Instructions
- Cut chicken into 6 pieces: 2 breasts, 2 legs, 2 wings.
- Peel and smash garlic cloves. Peel and quarter onion.
- Cut celery and carrots into 2” pieces.
- In a large stock pot, combine all ingredients and bring to boil.
- Reduce heat to low and simmer 15 minutes. Skim froth from top.
- Cover and simmer 2 hours.
- Remove meat to large bowl.
- Strain broth over large bowl. Discard all solids.
- Store, covered, in refrigerator up to 3 days or freeze
