Ingredients
  • 4 boneless skinless chicken breasts
  • 1tbsp Olive Oil
  • 1 1/2tsp Balsamic Vinegar
  • 1tsp Minced Garlic
  • 1tbsp lemon zest
  • 1/4tsp salt
  • 1/4tsp Black Pepper
  • 1 Cooking Spray
  • 1/2cup white wine
  • 1/2cup chopped tomato
  • 1/2tsp ground rosemary
Instructions
  1. Place chicken in shallow dish.
  2. In small bowl, whisk olive oil, vinegar, garlic, lemon zest, salt, and pepper. Brush over chicken.
  3. Let stand for 10 minutes.
  4. Coat large skillet with cooking spray and heat over medium. Add chicken and cook until browned, 3-5 minutes per side.
  5. Add wine, tomato, and rosemary to skillet and heat to boiling.
  6. Reduce heat to low and simmer, covered, until chicken is cooked, 12-15 minutes, until internal temperature reaches 165°F.
