white wine

chopped tomato

Instructions
Place chicken in shallow dish.
In small bowl, whisk olive oil, vinegar, garlic, lemon zest, salt, and pepper. Brush over chicken.
Let stand for 10 minutes.
Coat large skillet with cooking spray and heat over medium. Add chicken and cook until browned, 3-5 minutes per side.
Add wine, tomato, and rosemary to skillet and heat to boiling.
Reduce heat to low and simmer, covered, until chicken is cooked, 12-15 minutes, until internal temperature reaches 165°F.
