Ingredients
- 4 boneless skinless chicken breasts
- 1 tbsp Olive Oil
- 1 1/2 tsp Balsamic Vinegar
- 1 tsp Minced Garlic
- 1 tbsp lemon zest
- 1/4 tsp salt
- 1/4 tsp Black Pepper
- 1 Cooking Spray
- 1/2 cup white wine
- 1/2 cup chopped tomato
- 1/2 tsp ground rosemary
Instructions
- Place chicken in shallow dish.
- In small bowl, whisk olive oil, vinegar, garlic, lemon zest, salt, and pepper. Brush over chicken.
- Let stand for 10 minutes.
- Coat large skillet with cooking spray and heat over medium. Add chicken and cook until browned, 3-5 minutes per side.
- Add wine, tomato, and rosemary to skillet and heat to boiling.
- Reduce heat to low and simmer, covered, until chicken is cooked, 12-15 minutes, until internal temperature reaches 165°F.
