Ingredients
- Cooking Spray
- 1 small russet potato
- 1 1/2 cups shredded mozzarella cheese
- 1 lb Ground Beef
- 1/2 cup fresh chopped yellow onion
- 2 pressed or minced garlic cloves
- 14 1/2 oz canned unsalted diced tomatoes
- 2 tbsp taco sauce
- 1 tbsp Chili Powder
- 2 cups fresh shredded cabbage
- 1 pinch salt
- 1 pinch Black Pepper
- 1 small jalapeño sliced (optional)
Instructions
- Preheat oven to 375°F. Lightly coat 2-quart casserole dish with cooking spray.
- Peel and grate potato into bowl. Add 1/4 cup mozzarella. Spread evenly over bottom of the prepared casserole. Bake 15 to 20 minutes, until potato is browned and crispy. Remove from oven.
- In large skillet, over medium high heat, brown ground beef, onion, and garlic, breaking up the beef with wooden spoon. Drain any excess fat.
- Add tomatoes with juice, taco sauce, chili powder, and cabbage. Season with salt and pepper to taste. Carefully stir and cook for about 3 minutes.
- Spoon beef mixture on top of potatoes. Top with remaining cheese and (if desired) jalapeño slices. Bake 20 to 30 minutes, until casserole is hot and bubbly. Serve immediately.
