Ingredients
  • 36 medium button mushrooms
  • 1cup Unsalted Butter
  • 1/2cup finely chopped onion
  • 5ounces chopped fresh baby spinach
  • 3tsp Cream Cheese
  • 1/8tsp ground nutmeg
  • 1pinch salt
  • 1pinch Black Pepper
Instructions
  1. Preheat oven to 425°F.
  2. Remove stems from mushrooms and chop finely.
  3. In small skillet melt butter over medium heat. Sauté mushroom stems and onion until softened, about 5 minutes.
  4. Add spinach and stir until wilted, 1 to 2 minutes. Turn off heat, then mix in cream cheese and nutmeg. Season to taste with salt and pepper.
  5. Place mushroom caps in baking pan and fill with cream cheese mixture. Bake uncovered, 5 minutes.
