Ingredients
- 36 medium button mushrooms
- 1 cup Unsalted Butter
- 1/2 cup finely chopped onion
- 5 ounces chopped fresh baby spinach
- 3 tsp Cream Cheese
- 1/8 tsp ground nutmeg
- 1 pinch salt
- 1 pinch Black Pepper
Instructions
- Preheat oven to 425°F.
- Remove stems from mushrooms and chop finely.
- In small skillet melt butter over medium heat. Sauté mushroom stems and onion until softened, about 5 minutes.
- Add spinach and stir until wilted, 1 to 2 minutes. Turn off heat, then mix in cream cheese and nutmeg. Season to taste with salt and pepper.
- Place mushroom caps in baking pan and fill with cream cheese mixture. Bake uncovered, 5 minutes.
