Ingredients

  • Cooking Spray
  • 8 oz fresh mushroom slices
  • 1/2 cup fresh onion chopped
  • 4 Eggs
  • 8 Egg Whites
  • 8 oz pork sausage
  • 1/4 cup cheddar cheese shredded
  • 1/2 cup Whole Milk
  • 1/4 tsp salt
  • 1/4 tsp Black Pepper

Instructions

  1. Preheat oven to 350°F.
  2. Lightly coat skillet with cooking spray. Heat over medium-high.
  3. Add mushrooms and onions. Cook, stirring occasionally, until onions are translucent, about 6 minutes.
  4. Move onions and mushrooms from skillet to mixing bowl.
  5. In separate bowl, lightly beat eggs and egg whites. Set aside.
  6. Place sausage in skillet and cook until easily crumbled and no longer pink, about 8 minutes.
  7. With slotted spoon, move sausage from skillet to paper towels to drain.
  8. Combine sausage, eggs, cheese, milk, salt, and pepper with mushroom mix in bowl.
  9. Lightly coat 10" pie plate with cooking spray. Place on baking sheet and put on center shelf of oven. Pour mixture into pie pan.
  10. Bake 30 minutes, until completely set. Allow to rest 15 minutes. Cut into 8 slices, serve warm.
