Crustless quiche with sausage and cheddar cheese.

Ingredients
- Cooking Spray
- 8 oz fresh mushroom slices
- 1/2 cup fresh onion chopped
- 4 Eggs
- 8 Egg Whites
- 8 oz pork sausage
- 1/4 cup cheddar cheese shredded
- 1/2 cup Whole Milk
- 1/4 tsp salt
- 1/4 tsp Black Pepper
Instructions
- Preheat oven to 350°F.
- Lightly coat skillet with cooking spray. Heat over medium-high.
- Add mushrooms and onions. Cook, stirring occasionally, until onions are translucent, about 6 minutes.
- Move onions and mushrooms from skillet to mixing bowl.
- In separate bowl, lightly beat eggs and egg whites. Set aside.
- Place sausage in skillet and cook until easily crumbled and no longer pink, about 8 minutes.
- With slotted spoon, move sausage from skillet to paper towels to drain.
- Combine sausage, eggs, cheese, milk, salt, and pepper with mushroom mix in bowl.
- Lightly coat 10" pie plate with cooking spray. Place on baking sheet and put on center shelf of oven. Pour mixture into pie pan.
- Bake 30 minutes, until completely set. Allow to rest 15 minutes. Cut into 8 slices, serve warm.
