Ingredients

  • Cooking Spray
  • 1 lb fresh cod fillets
  • 1/4 tsp salt
  • 1/8 tsp Black Pepper
  • 1/8 tsp paprika
  • 2 oz Fresh Cherry Tomatoes
  • 6 pitted calamata olives
  • 1 tbsp capers drained
  • 1/4 cup chopped parsley
  • 1/4 tsp Minced Garlic
  • 1 cup Extra Virgin Olive Oil
  • 1 tsp Fresh Lemon Juice
  • 1 medium lemon

Instructions

  1. Preheat the oven to 400°F.
  2. Coat nonstick baking sheet with cooking spray.
  3. Season both sides of fillets with salt, pepper, and paprika. Arrange on prepared baking sheet and bake 10 to 12 minutes until internal temperature reaches 145°F.
  4. Meanwhile, slice tomatoes and olives in half.
  5. In small bowl, mix tomatoes, olives, capers, parsley, garlic, olive oil, and lemon juice. Set aside.
  6. Cut lemon into wedges.
  7. Arrange fillets on dinner plates, top with tomato-caper salsa. Garnish with small lemon wedge.
