Ingredients
- Cooking Spray
- 1 lb fresh cod fillets
- 1/4 tsp salt
- 1/8 tsp Black Pepper
- 1/8 tsp paprika
- 2 oz Fresh Cherry Tomatoes
- 6 pitted calamata olives
- 1 tbsp capers drained
- 1/4 cup chopped parsley
- 1/4 tsp Minced Garlic
- 1 cup Extra Virgin Olive Oil
- 1 tsp Fresh Lemon Juice
- 1 medium lemon
Instructions
- Preheat the oven to 400°F.
- Coat nonstick baking sheet with cooking spray.
- Season both sides of fillets with salt, pepper, and paprika. Arrange on prepared baking sheet and bake 10 to 12 minutes until internal temperature reaches 145°F.
- Meanwhile, slice tomatoes and olives in half.
- In small bowl, mix tomatoes, olives, capers, parsley, garlic, olive oil, and lemon juice. Set aside.
- Cut lemon into wedges.
- Arrange fillets on dinner plates, top with tomato-caper salsa. Garnish with small lemon wedge.
