Ingredients

  • 6 Eggs
  • 2 Tbsp Mayonnaise
  • 1 Tsp Dijon Mustard
  • 1/4 Tsp Black Pepper
  • 1/8 Tsp salt
  • 1/8 Tsp Ground Cayenne

Instructions

  1. Place eggs in a medium saucepan and cover with cold water. Bring water to rolling boil, reduce heat to medium and boil 5 minutes.
  2. Turn off heat, cover and let eggs stand in hot water for 5 minutes. Drain, run under cold water, add ice cubes and let sit 5 minutes.
  3. Remove eggshells. Slice eggs in half lengthwise. Remove yolks and place in a medium bowl.
  4. Set aside egg whites on serving platter. Add mayonnaise, Dijon mustard, black pepper, and salt to egg yolks. Mash with fork until creamy.
  5. Fill hollowed egg white halves with the yolk mixture. Dust with cayenne pepper, adjusting amount to taste.
  6. Cover and chill until ready to serve.
