  • 1/2cup plainwhole milk yogurt
  • 1/2tsp anchovy paste
  • 1tsp Fresh Lemon Juice
  • 1tsp Balsamic Vinegar
  • 4tsp Dijon Mustard
  • 1/2tsp Worcestershire sauce
  • 1 Medium Garlic Clove
  • 1/4cup grated Parmesan cheese
  • 1pinch Black Pepper
  • 6cups romaine lettuce
  • 2tbsp fresh chopped red onion
  1. In a food processor fitted with a metal blade, blend together yogurt, anchovy paste, lemon juice, vinegar, Dijon mustard, Worcestershire sauce, garlic, 2 tablespoons of Parmesan cheese, and pepper to taste.
  2. Cover and chill at least 2 hours and up to 2 days.
  3. Wash and dry lettuce. Place in large salad bowl. Sprinkle with red onion and remaining 2 tablespoons Parmesan cheese.
  4. Drizzle dressing over salad. Toss and serve.

This healthful dressing is made with yogurt rather than a raw egg or mayonnaise. The anchovy paste adds the distinctive umami flavor of Caesar dressing but can be omitted. To turn the salad into a meal, add grilled or roasted chicken.
