Ingredients

  • 1/2 cup plain whole milk yogurt
  • 1/2 tsp anchovy paste
  • 1 tsp Fresh Lemon Juice
  • 1 tsp Balsamic Vinegar
  • 4 tsp Dijon Mustard
  • 1/2 tsp Worcestershire sauce
  • 1 Medium Garlic Clove
  • 1/4 cup grated Parmesan cheese
  • 1 pinch Black Pepper
  • 6 cups romaine lettuce
  • 2 tbsp fresh chopped red onion

Instructions

  1. In a food processor fitted with a metal blade, blend together yogurt, anchovy paste, lemon juice, vinegar, Dijon mustard, Worcestershire sauce, garlic, 2 tablespoons of Parmesan cheese, and pepper to taste.
  2. Cover and chill at least 2 hours and up to 2 days.
  3. Wash and dry lettuce. Place in large salad bowl. Sprinkle with red onion and remaining 2 tablespoons Parmesan cheese.
  4. Drizzle dressing over salad. Toss and serve.
