  • 1tbsp Olive Oil
  • 12oz sliced fresh mushrooms
  • 1 minced medium shallot
  • 1/4cup white wine
  • 4cups fresh broccoli florets
  • 1/2tsp Kosher Salt
  • 1/2cup Low Sodium Chicken Broth
  • 1/4tsp Black Pepper
  1. In large skillet, heat oil over medium. Add mushrooms and shallots, sprinkle with 1/4 tsp salt, and cook 8 minutes or until mushrooms release their liquid and turn golden.
  2. Add wine and bring to a boil. Reduce heat and simmer for 4 minutes, stirring often.
  3. Remove mushrooms from skillet with slotted spoon. Set aside.
  4. Add broccoli, remaining salt, and broth. Bring to boil, reduce heat to simmer, cover, and cook 10 minutes or until broccoli is crunchy but soft.
  5. Return mushrooms to skillet. Add pepper. Toss vegetables to mix. Serve.
