Ingredients
- 1 tbsp Olive Oil
- 12 oz sliced fresh mushrooms
- 1 minced medium shallot
- 1/4 cup white wine
- 4 cups fresh broccoli florets
- 1/2 tsp Kosher Salt
- 1/2 cup Low Sodium Chicken Broth
- 1/4 tsp Black Pepper
Instructions
- In large skillet, heat oil over medium. Add mushrooms and shallots, sprinkle with 1/4 tsp salt, and cook 8 minutes or until mushrooms release their liquid and turn golden.
- Add wine and bring to a boil. Reduce heat and simmer for 4 minutes, stirring often.
- Remove mushrooms from skillet with slotted spoon. Set aside.
- Add broccoli, remaining salt, and broth. Bring to boil, reduce heat to simmer, cover, and cook 10 minutes or until broccoli is crunchy but soft.
- Return mushrooms to skillet. Add pepper. Toss vegetables to mix. Serve.
