Ingredients
  • 15 1/2oz Canned Black Beans
  • 2 Medium Garlic Cloves
  • 1 large tomato
  • 1/2 Red Onion
  • 2 Scallions
  • 1 jalapeño pepper
  • 1tsp Chili Powder
  • 1tsp Ground Cumin
  • 1tsp Extra Virgin Olive Oil
  • 1tsp Red Wine Vinegar
  • 1tsp Fresh Lemon Juice
  • 1pinch Kosher Salt
  • 1pinch Black Pepper
  • 2tbsp chopped fresh cilantro
Instructions
  1. Drain and rinse black beans.
  2. Peel and mince garlic.
  3. Dice tomato, red onion, and scallions.
  4. Cut jalapeño pepper in half. Remove and discard seeds. Mince pepper.
  5. In large bowl, toss beans, tomato, garlic, peppers, scallions, onions, chili powder, cumin, olive oil, vinegar, lemon juice, salt, black pepper, and cilantro.
  6. Cover and refrigerate at least 1 day, up to 3 days, before serving.
