Ingredients

  • 15 1/2 oz Canned Black Beans
  • 2 Medium Garlic Cloves
  • 1 large tomato
  • 1/2 Red Onion
  • 2 Scallions
  • 1 jalapeño pepper
  • 1 tsp Chili Powder
  • 1 tsp Ground Cumin
  • 1 tsp Extra Virgin Olive Oil
  • 1 tsp Red Wine Vinegar
  • 1 tsp Fresh Lemon Juice
  • 1 pinch Kosher Salt
  • 1 pinch Black Pepper
  • 2 tbsp chopped fresh cilantro

Instructions

  1. Drain and rinse black beans.
  2. Peel and mince garlic.
  3. Dice tomato, red onion, and scallions.
  4. Cut jalapeño pepper in half. Remove and discard seeds. Mince pepper.
  5. In large bowl, toss beans, tomato, garlic, peppers, scallions, onions, chili powder, cumin, olive oil, vinegar, lemon juice, salt, black pepper, and cilantro.
  6. Cover and refrigerate at least 1 day, up to 3 days, before serving.
