Ingredients
- 15 1/2 oz Canned Black Beans
- 2 Medium Garlic Cloves
- 1 large tomato
- 1/2 Red Onion
- 2 Scallions
- 1 jalapeño pepper
- 1 tsp Chili Powder
- 1 tsp Ground Cumin
- 1 tsp Extra Virgin Olive Oil
- 1 tsp Red Wine Vinegar
- 1 tsp Fresh Lemon Juice
- 1 pinch Kosher Salt
- 1 pinch Black Pepper
- 2 tbsp chopped fresh cilantro
Instructions
- Drain and rinse black beans.
- Peel and mince garlic.
- Dice tomato, red onion, and scallions.
- Cut jalapeño pepper in half. Remove and discard seeds. Mince pepper.
- In large bowl, toss beans, tomato, garlic, peppers, scallions, onions, chili powder, cumin, olive oil, vinegar, lemon juice, salt, black pepper, and cilantro.
- Cover and refrigerate at least 1 day, up to 3 days, before serving.
