Beet and Grapefruit Salad
Spiced beet and grapefruit seasoned with sweetener, cloves, and allspice

Ingredients
  • 1 fresh grapefruit
  • 1 1/2cup canned beets with liquid
  • 1 bay leaf
  • 4 ground cloves
  • 4 Ground Allspice
  • 1oz Equal packets
Instructions
  1. Slice grapefruit in half, remove seeds and place face down in large bowl.
  2. Drain beets, reserving 1/2 cup of liquid. Place beets in bowl with grapefruit.
  3. In small saucepan, stir reserved beet liquid, bay leaf, cloves, and allspice.
  4. Bring to boil, then reduce heat. Simmer 5 minutes. Let cool to room temperature. (To speed cooling, place pan in large bowl of ice.)
  5. Strain sauce through fine sieve or cheesecloth into a small bowl. Add sweetener and mix well.
  6. Pour sauce over beets and grapefruit. Turn grapefruit to coat with sauce. Cover and marinate in refrigerator at least 1 hour. Drain liquid.
  7. To serve, cut each grapefruit half into half again. Arrange on individual plates, add beets. Serv
