Ingredients
- 8 oz extra lean beef tenderloin
- 1 pinch salt
- 1 pinch Black Pepper
- cup ¼chopped red onion
- 1 cup Chopped Green Bell Pepper
- 2 tbsp salad dressing sun dried tomato
- 1 large tomato
- 1/2 head green lettuce
- 2 tsp chopped parsley
Instructions
- Remove beef from refrigerator 30 minutes prior to cooking.
- Allow to rest at room temperature.
- Preheat oven broiler.
- Season steak with salt and pepper to taste.
- Place steak on broiler pan, 6" from heat source, cook 6-8 minutes per side for medium-rare.
- Remove steak from oven, allow to cool.
- Slice meat into bite-sized cubes.
- Finely chop green bell pepper and red onion.
- In glass mixing bowl, combine beef, onions, peppers, and dressing. Cover and refrigerate at least 1 hour.
- Wash and core tomatoes before cutting into wedges.
- Add tomatoes to meat mixture and toss.
- Rinse lettuce in cold water, pat dry or use salad spinner to remove any water.
- Line individual salad bowls with lettuce and mound salad into center.
- Sprinkle parsley over salad and serve
