Ingredients

  • 4 Fresh Tomatoes
  • 2 Fresh Cucumbers
  • 2 Tsp Crushed Garlic
  • 2 Tsp Olive Oil
  • 1/4 Cup Balsamic Vinegar
  • 1/4 Cup Fresh Basil
  • 1 Pinch Black Pepper
  • 1/4 Tsp salt

Instructions

  1. Slice tomatoes and place in 13"x9" shallow glass dish.
  2. Peel and slice cucumbers into 1/2" pieces. Set aside in refrigerator.
  3. In small glass bowl, combine garlic, oil, vinegar, and basil.
  4. Pour dressing over tomato slices, let stand at room temperature 30 minutes.
  5. Gently turn tomato slices. Let stand at room temperature for additional 30 minutes.
  6. Place cucumbers in serving dish, top with marinated tomatoes. Add salt and pepper to taste. Serve.
