Ingredients
- 6 lb whole salmon
- 1 pinch salt
- 1 pinch Black Pepper
- 1 lemon
- 1 onion
- 6 slices raw bacon
Instructions
- Preheat oven to 450°F.
- Gut, scale, and clean salmon, or have your fishmonger do it. Leave head and tail on.
- Measure around widest part of girth.
- Line 9" x 13" baking pan with enough aluminum foil to wrap around whole fish. Place salmon in pan.
- Sprinkle salmon with salt and pepper, inside and out.
- Place 3 bacon slices lengthwise inside salmon. Stuff with lemon and onion slices. Place remaining bacon on top.
- Seal foil to wrap salmon.
- Bake 10 minutes per 1” of girth until internal temperature reaches 145°F.
- Discard bacon, lemon, and onion. To serve, place lemon slices over the eyes
