Ingredients

  • 6 lb whole salmon
  • 1 pinch salt
  • 1 pinch Black Pepper
  • 1 lemon
  • 1 onion
  • 6 slices raw bacon

Instructions

  1. Preheat oven to 450°F.
  2. Gut, scale, and clean salmon, or have your fishmonger do it. Leave head and tail on.
  3. Measure around widest part of girth.
  4. Line 9" x 13" baking pan with enough aluminum foil to wrap around whole fish. Place salmon in pan.
  5. Sprinkle salmon with salt and pepper, inside and out.
  6. Place 3 bacon slices lengthwise inside salmon. Stuff with lemon and onion slices. Place remaining bacon on top.
  7. Seal foil to wrap salmon.
  8. Bake 10 minutes per 1” of girth until internal temperature reaches 145°F.
  9. Discard bacon, lemon, and onion. To serve, place lemon slices over the eyes
