Ingredients
  • 1lb Fresh Asparagus
  • 1cup tap water
  • 1/8tsp salt
  • 1tbsp Red Wine Vinegar
  • 2tbsp Olive Oil
  • 1/2cup minced red onion
  • 1/4cup Crumbled Feta Cheese
  • 2tbsp chopped walnuts
Instructions
  1. Rinse asparagus and cut off tough ends. Holding spears flat on cutting board, use vegetable peeler to remove fibrous skin from lower third of stalk, revealing pale green flesh.
  2. In large skillet, add 1 cup tap water and salt, and bring to boil. Add asparagus spears. When water returns to the boil, cook asparagus for 4-6 minutes or until tender when pierced with fork.
  3. Plunge asparagus into cold water bath to stop cooking. Drain asparagus, pat dry and place in flat baking dish.
  4. In small bowl, whisk vinegar, olive oil, red onion, and pinch of salt. Pour dressing over asparagus and toss to coat evenly.
  5. Sprinkle with feta cheese and walnuts, and serve.
