Ingredients
- 1 lb Fresh Asparagus
- 1 cup tap water
- 1/8 tsp salt
- 1 tbsp Red Wine Vinegar
- 2 tbsp Olive Oil
- 1/2 cup minced red onion
- 1/4 cup Crumbled Feta Cheese
- 2 tbsp chopped walnuts
Instructions
- Rinse asparagus and cut off tough ends. Holding spears flat on cutting board, use vegetable peeler to remove fibrous skin from lower third of stalk, revealing pale green flesh.
- In large skillet, add 1 cup tap water and salt, and bring to boil. Add asparagus spears. When water returns to the boil, cook asparagus for 4-6 minutes or until tender when pierced with fork.
- Plunge asparagus into cold water bath to stop cooking. Drain asparagus, pat dry and place in flat baking dish.
- In small bowl, whisk vinegar, olive oil, red onion, and pinch of salt. Pour dressing over asparagus and toss to coat evenly.
- Sprinkle with feta cheese and walnuts, and serve.
