Ingredients

  • 1/2 Lb Fresh Asparagus
  • 4 Eggs
  • 2 Tsp Olive Oil
  • 4 Oz Shredded Gruyere Cheese
  • 1/2 Cup Chopped Onion
  • 1 Pinch Black Pepper
  • 1/2 Tsp salt

Instructions

  1. Preheat broiler.
  2. Rinse asparagus. Cut off tough ends of asparagus and discard. Cut spears into 1" pieces. Set aside.
  3. In small bowl, whisk eggs. Set aside.
  4. Heat olive oil in 10" ovenproof skillet over medium heat.
  5. Add onions, salt, and pepper. Stir until onions are softened but not browned, about 3 minutes.
  6. Add asparagus, reduce heat to medium-low, and cook covered until asparagus is barely tender, 6 to 8 minutes.
  7. Pour in eggs and cook until almost set but still runny on top, about 2 minutes.
  8. Sprinkle cheese over eggs and broil until cheese is melted and browned, 3-5 minutes.
  9. Remove from broiler. Let sit 5 minutes. Cut into wedges and serve.
