Ingredients
- 1/2 Lb Fresh Asparagus
- 4 Eggs
- 2 Tsp Olive Oil
- 4 Oz Shredded Gruyere Cheese
- 1/2 Cup Chopped Onion
- 1 Pinch Black Pepper
- 1/2 Tsp salt
Instructions
- Preheat broiler.
- Rinse asparagus. Cut off tough ends of asparagus and discard. Cut spears into 1" pieces. Set aside.
- In small bowl, whisk eggs. Set aside.
- Heat olive oil in 10" ovenproof skillet over medium heat.
- Add onions, salt, and pepper. Stir until onions are softened but not browned, about 3 minutes.
- Add asparagus, reduce heat to medium-low, and cook covered until asparagus is barely tender, 6 to 8 minutes.
- Pour in eggs and cook until almost set but still runny on top, about 2 minutes.
- Sprinkle cheese over eggs and broil until cheese is melted and browned, 3-5 minutes.
- Remove from broiler. Let sit 5 minutes. Cut into wedges and serve.
