  • 6Cups Chopped Arugula
  • 3/4Cup Grated Parmesan
  • 1Cup Fresh Cherry TomatoesCut in half
  • 3Tbsp Olive Oil
  • 2Tbsp Fresh Lemon Juice
  • 1Pinch salt
  • 1Pinch Black Pepper
  1. Wash arugula by soaking. Spin dry, or spread leaves on a clean dish towel to dry.
  2. Put 1/2 cup of Parmesan in salad bowl. Add cherry tomatoes and arugula. Cover and chill until ready to serve.
  3. When ready to serve, whisk olive oil, lemon juice and salad in small bowl.
  4. Drizzle dressing over arugula, cheese and tomatoes, and toss lightly.
  5. Sprinkle with remaining 1/4 cup cheese and fresh pepper.
  6. Serve immediately.
