Ingredients
- 6 Cups Chopped Arugula
- 3/4 Cup Grated Parmesan
- 1 Cup Fresh Cherry Tomatoes Cut in half
- 3 Tbsp Olive Oil
- 2 Tbsp Fresh Lemon Juice
- 1 Pinch salt
- 1 Pinch Black Pepper
Instructions
- Wash arugula by soaking. Spin dry, or spread leaves on a clean dish towel to dry.
- Put 1/2 cup of Parmesan in salad bowl. Add cherry tomatoes and arugula. Cover and chill until ready to serve.
- When ready to serve, whisk olive oil, lemon juice and salad in small bowl.
- Drizzle dressing over arugula, cheese and tomatoes, and toss lightly.
- Sprinkle with remaining 1/4 cup cheese and fresh pepper.
- Serve immediately.
