My A1C is 7.6. Because I live in an area where there are no reliable doctors, I self doctor and try to monitor my health. I currently take 1000mg of metformin daily. Should I increase this amount? If so, what amount should I take?

Unfortunately, I cannot recommend increasing your medication because I am not your healthcare provider. As a person with diabetes who takes medication, you do need to be monitored by a medical doctor or qualified medical provider; this is something you can't do on your own. I recommend seeing a doctor, physician's assistant, or nurse practitioner in another city or county a few times a year if you do not feel the ones in your area are reliable.
