Ingredients

  • 2 cup cooked chicken breasts diced
  • 1 cup canned sweet yellow corn drained
  • 1 fresh tomato equal to 1 cup
  • 1 cup green peas frozen
  • 1/2 green bell pepper chopped
  • 1/2 cup red bell pepper sliced
  • 1/3 cup low-sodium canned black beans
  • 1 tbsp Olive Oil
  • 1/4 cup Fresh Lime Juice
  • 2 tsp cumin seeds
  • 1 tbsp fresh coriander leaves
  • 2 tsp Chili Powder
  • 1 tsp Ground Oregano

Instructions

  1. In large serving bowl, combine all salad ingredients.
  2. In blender or food processor, pulse together all dressing ingredients.
  3. Add cooked chicken and dressing to salad, toss well to mix. Serve.
