Ingredients

  • 9 cups no salt chicken broth
  • 3 tbsp chopped fresh jalapeno chili peppers without seeds
  • 2 cups chopped fresh cilantro
  • 2 ripe avocados
  • 1/8 tsp salt

Instructions

  1. In large saucepan, over medium high, bring broth to boil. Turn off heat.
  2. Cut avocados in half, remove pit, and scoop out flesh into small bowl.
  3. Add peppers, cilantro, and salt. Mash with fork, leaving avocado slightly chunky.
  4. To serve, scoop heaping tablespoon of avocado mixture into each soup bowl. Ladle cup of hot broth around avocado mixture. Serve
