Maryland Salmon Patties

Maryland Salmon Patties

These pan seared salmon patties are made from canned salmon, and seasoned with horseradish and dill.

Ingredients

  • 7 1/2 oz canned boneless, skinless salmon
  • 1/4 cup whole wheat bread crumbs
  • 2 tbsp minced red onion
  • 2 tbsp fresh dill weed
  • 1 egg
  • 1 tbsp mayonnaise
  • 2 tsp horseradish
  • cooking spray

Directions

  1. In medium bowl, mix salmon, bread crumbs, onion, dill, egg, mayonnaise, and horseradish.
  2. Form mixture into 4 patties.
  3. Coat medium skillet with cooking spray and heat over medium-high.
  4. Place salmon cakes in pan and cook on both sides until golden brown, 4 minutes per side.

Note

Using canned wild Alaskan salmon with the bones (don't worry, they crumble into nothing, and you'll hardly notice them) will increase the nutritional benefits. One 1 ounce serving of canned salmon with bones provides 8 percent of the recommended daily value of calcium. Without bones, the daily value of calcium drops to just 1 percent.
