Ingredients

  • 1/2 cup Mayonnaise
  • 1 tsp Dijon Mustard
  • 1 tsp vinegar
  • 1/4 tsp salt
  • 1/4 tsp Black Pepper
  • 3 large hard-boiled eggs
  • 1/2 cup Red Onion
  • 32 oz frozen baby peas
  • 1 tsp Fresh Parsley chopped

Instructions

  1. In small glass bowl, mix mayonnaise, mustard, vinegar, salt, and pepper to make dressing.
  2. Chop hard boiled eggs and finely chop red onion. Place in separate medium bowl and add peas.
  3. Add dressing to pea mixture. Blend well.
  4. Refrigerate for at least an hour before serving. Garnish with parsley.
