Garlic Roasted Zucchini and Squash

Zucchini, yellow squash, onion, and garlic, tossed with olive oil, and baked.

  • 3 medium zucchini
  • 3 medium summer squash
  • 1 red onion
  • 6 medium garlic cloves
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • cooking spray


  1. Preheat oven to 450°F.
  2. Slice and quarter zucchini, yellow squash, and onion. Peel and mince garlic cloves.
  3. In medium bowl combine zucchini, yellow squash, onion, garlic, oil, salt, and pepper. Toss well.
  4. Lightly coat 13" x 9" x 2" glass pan with cooking spray.
  5. Arrange squash mixture evenly in pan and bake 30 minutes or until vegetables are tender, stirring every 15 minutes.
