Ingredients

  • 1 whole raw chicken
  • 4 Medium Garlic Cloves
  • 2 medium onions
  • 2 medium celery stalks
  • 1 medium carrot
  • 1 cup fresh sliced parsnip
  • 6 parsley sprigs
  • 1 Bay Leaves
  • 1/4 tsp black peppercorns
  • 8 cups cold water

Instructions

  1. Cut chicken into 6 pieces: 2 breasts, 2 legs, 2 wings.
  2. Peel and smash garlic cloves. Peel and quarter onion.
  3. Cut celery and carrots into 2” pieces.
  4. In a large stock pot, combine all ingredients and bring to boil.
  5. Reduce heat to low and simmer 15 minutes. Skim froth from top.
  6. Cover and simmer 2 hours.
  7. Remove meat to large bowl.
  8. Strain broth over large bowl. Discard all solids.
  9. Store, covered, in refrigerator up to 3 days or freeze
