Cauliflower “Mac and Cheese” Recipe

Healthful cauliflower gets a quick “mac and cheese” topping (parmesan cheese and mustard sauce baked till golden brown) in this vegetarian side dish.

Ingredients

  • 1 medium Cauliflower head 5" - 6"
  • 3 tbsp Unsalted Butter
  • 1 tbsp Mayonnaise
  • 1 tsp Dijon Mustard
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 350°F.
  2. Trim stem and green leaves from bottom of cauliflower head. Place in saucepan. Add 1" of water. Bring to boil. Cover.
  3. Steam whole head of cauliflower 15 to 20 minutes until tender.
  4. Drain water from saucepan and transfer cauliflower to soufflé dish.
  5. In small mixing bowl, combine mayonnaise and mustard. Spread on top of cauliflower. Dot with butter.
  6. Sprinkle generously with Parmesan cheese.
  7. Bake uncovered, for 15 minutes, or until the cheese is brown.
