Ingredients

  • 4 bacon slices
  • 3 lb top sirloin steak cut into 2" cubes
  • 1/4 tsp salt
  • 1/4 tsp Black Pepper
  • 1/4 cup whole-wheat flour
  • 1 cup chopped carrots
  • 3 chopped garlic cloves
  • 1 bay leaf
  • 1 tsp ground marjoram
  • 1/2 tsp ground thyme
  • 2 1/2 cups low-sodium beef broth
  • 1 cup sliced fresh mushrooms
  • 1 cup cauliflower florets
  • 1 cup frozen pearl onions

Instructions

  1. Cook bacon over medium high heat in Dutch oven until it renders its fat. Remove bacon and set aside.
  2. Sprinkle salt and pepper over beef, and dredge pieces in flour.
  3. Brown beef in batches, 3 to 5 pieces at a time (don't overcrowd).
  4. Return browned beef to pot, add carrots, herbs, beef stock, and chopped bacon.
  5. Bring to a boil, then simmer for 1 hour.
  6. Add mushrooms, cauliflower, and onions, bring back to a simmer, and cook on low for 20 minutes or until meat is tender. Allow to sit, off heat for at least 10 minutes to let flavors meld. Before serving, remove bay leaf, and heat to desired temperature.
