Baked Cod Fillets Almondine

Classic, simple baked fish, cod fillets in butter, lemon, garlic and dill, topped with crunchy, toasted almonds.

Ingredients

  • 1 lb fresh cod fillets
  • Cooking spray
  • 2 tbsp fresh dill weed
  • 4 tsp unsalted butter
  • 4 tsp fresh lemon juice
  • 1 tsp crushed garlic
  • 2 tbsp sliced almonds

Directions

  1. Preheat oven to 425°F.
  2. Coat baking dish with cooking spray. Arrange fish in single layer.
  3. In small bowl, mix dill, butter, lemon juice, and garlic. Pour over fish.
  4. Bake 15 minutes.
  5. Sprinkle with almonds. Continue cooking 2 more minutes, until almonds are toasted and internal temperature reaches 145°F.
