Q: I have prednisone induced diabetes, two weeks no prednisone, and back to vegan lifestyle. Have lost three pounds. I need a meal plan. I was a vegan for 20 yrs but was not diabetic. Endocrinologist is giving me 6 weeks to make a change. I start my exercise program today.
Congratulations on losing three pounds and making lifestyle changes. However, a vegan approach isn't advisable for people with diabetes because they are typically high in carbohydrates like wheat, other grains, and starchy vegetables, which raise blood sugar. Of course, if you don't want to eat animal products for religious or political reasons rather than health-related ones, this can be done, although it will take a lot of effort to meet all of your nutrient needs and keep your blood sugar within the healthy range. Make sure to include lots of healthy plant fats like avocado, coconut oil, and olive oil, and focus on nuts and seeds as your primary protein sources, along with small amounts of beans and legumes.
