Ingredients | Makes Servings
0.67 cup low carb baking mix
1 butter flavored cooking spray
1 small apples , cored and sliced into 8 pieces (Gala)
1 pinch ground cinnamon
4 oz sugar-free maple syrup (equal to 1/2 cup)

Directions
1 Make the pancake batter according to the directions on the package and put to the side.
2 Spray a large nonstick saute pan with the cooking spray and heat over medium high heat for 1 minute. Cook the apple slices for 1 minute on each side then season with cinnamon.
3 Pour the batter over each apple and cook until lightly golden brown on each side.
4 Separate the pancakes onto 2 plates and drizzle the maple syrup over all.

  Additional Information
You can use Granny Smith or Jonathan apples too.
