1 Fish, anchovies, European, with oil, drained, 2 ounce can , rinsed
2 tsp capers, drained
3 fresh plum tomatoes , seeded and chopped
1 tbsp fresh chopped onion
1 tbsp chopped parsley
0.25 cup Cheese, romano, fresh, grated (optional)
6 piece medium slice Italian bread

Directions
1 Preheat broiler or toaster oven.
2 Pat anchovies with a paper towel to dry, chop coarsely.
3 In a small bowl mix together everything except the bread.
4 Place bread on a baking tray and lightly toast in oven on both sides.
5 Serve bread immediately with mixture spooned on top.

  Additional Information
If sodium is a concern for you than watch out for this, it is on the higher side for sodium.
